Becky’s Kitchen Secrets !
I Designed and Built my own kitchen to have all the tools and appliances handy so all I need to focus on is recipes and food preparation. In one of the the large doors to the right, for example is a POP-UP industrial mixer, when I am done mixing, it goes back “down under” and out of sight, No more heavy lifting cooking is tough enough on my back ! After seeing the architectures in Tuscany, I decided to go Cucina Toscana ! Below Are some of my families secret recipe’s.
Walnut Relish Brie and Pear Crostini
Make 25 Crostinis
1 c. shelled walnuts, toasted and finely chopped ,1/4 cup minced green onions,2 tablespoons minced oil-packed sun dried tomatoes , 2 tablespoons oil, from sundried tomatoes, 1 tablespoon minced italian parsley, 1 teaspoon fresh chopped thyme, one tablespoon extra virgin oil, 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper. 25 (1/2 ” thick) slices of fresh baguette bread, lightly oiled and toasted. 1 pound Brie cheese, 2 ripe red skinned pears, cored and thinly sliced. Fresh thyme sprigs for garnish.
Instructions : In Medium bowl combine walnuts green onion, sun dried tomatoes, sun dried tomato oil, parsley, thyme, extra virgin oil, salt and pepper. Mix Well. Taste and adjust seasoning to your liking. To Assemble crostini spread heaping tablespoon of brie per crostini, topped with one teaspoon of walnut reslish, and tuck a pear slice diagonally into the relish. Garnish with sprig of thyme: Serve now.

Yields: 4 Servings
Banana Nut Bread
Ingredients
1 3/4 c Flour (All Purpose)
1/2 c Sugar
2 1/2 teaspoon Baking Powder
1/2 tsp Salt
Instructions
Mix all in large Bowl
Make Well In Center
ADD
1 Large Egg
1/3 C Veg Oil
1/2 C Milk
1 C Mashed very ripe bananas
Grease 8 1/2 inch Bread Pan
Pour Batter into Pan and Bake @ 350 for 45-60 Minutes
Fresh Mango Salsa
Yields: 4 Servings
Fresh Mango Salsa
Ingredients
2 Mangos (Ripe) finely Chopped
1/2 Red bell pepper finely Chopped
1/2 Purple Onion finely Chopped
2 1/2 tbs Cilantro chopped and fresh
3 tbs Mint (Fresh) finely chopped
1 Jalapeno peppers de-seeded and minced
2 tbs Lime Juice
1/2 tsp Salt
1/4 tsp Pepper
Instructions
Stir Together all ingredients cover and chill 3 hours
Yields 2 Cups
Dumps Tea Time Tessies
Yields: 24 Servings
Tea Time Tessies
Ingredients
1 c Flour (Plain)
3 ounces Cream cheese
1 stick Butter
– Filling –
1 c Brown Sugar (Packed)
1 c Pecans chopped finely
1 Egg
1 tsp Vanilla
1 dash Salt
Instructions
Mix and Divide into 24 pieces
Fit into small muffin tins
Filling
Mix Thoroughly & put into Crust
Bake @ 300 for 35 Minutes
Jeanni Hornungs Zuchini Bread
Yields: 4 Servings
Zuchini Bread
Ingredients
2 c Shredded Zuchini
1 1/4 c Flour
1/2 c Oil
2 Eggs Beaten
1/2 tblspoons Vanilla
1/2 tblspoons Cinnamon
1/4 teaspoon Cloves
1/8 teaspoon Nutmeg
3/4 tsp Salt
3/4 tsp Baking Soda
1/4 teaspoon Baking Powder
1/2 c Nuts
Instructions
Grease 1 Loaf Pan
Blend All Ingredients on Low 1 minute scraping bowl constantly
Beat Medium Speed 1 minunte
Pour Into Pan.
Bake 325 – 350 Degrees Until Wooden Pick Inserted in Center comes out clean
(50-60 Minutes)
Cool 10 Minutes, Remove From Pan, Cool Completely
JUDY’S Apple Pie
Yields: 6 Servings
Apple Pie
ingredients
6 Apples pealed And Sliced
Cinnamon
Nutmeg
Sugar
3/4 c Flour
1/2 c Sugar
1/3 c Butter
Instructions
Topping
Cut Together & Put Over Pie
Bake at 375 Degrees 50 – 60 Minutes
Kays Corn Cakes s
Yields: 4 Servings
Corn Cakes
Ingredients
1 1/2 c Corn Meal
1/2 c Flour (Unbleached)
4 tsp Baking Powder
1 tsp Salt
1 Egg
1 c Water
1/4 c Olive Oil
Instructions
Mix Dry Ingredients together
Put In Egg Water Oil and Mix with Egg Beater
Fry LIke Pancakes
Can Be Baked in 8 inch Squares 425 Degrees for 20 minutes
